Food safety training for restaurant and kitchen staff
Short shifts, high turnover and no time for long courses. Here is how restaurants keep food safety top of mind without pulling the whole team off the floor for a day.
The fastest way to keep restaurant staff food-safe between formal courses is short, regular, hands-on sessions. Food Safety Legends is a board game that runs in 30–60 minutes, needs no external trainer, and puts cooks, servers, scullery and managers in the same conversation about hygiene, cross-contamination, allergens and temperature control.
Why food safety training is hard in restaurants
- Staff turnover: new people start every month, so a once-a-year course leaves many of them untrained for most of the year.
- Time: a full-day course means closing a section or paying overtime. Most kitchens can spare 30–60 minutes before service, not a day.
- Mixed roles: chefs, servers, bartenders and cleaners all handle food or food-contact surfaces, and they all need the basics.
- Inspections: under South Africa's R638 the person in charge must make sure food handlers are trained, and environmental health practitioners can ask how you do it.
How restaurants use Food Safety Legends
Pre-service huddle
Draw three Pitfall cards before lunch service and talk through them: has this happened here, and what do we do?
New-hire induction
Every new starter plays a short session in their first week instead of reading a policy alone. See induction training.
Monthly refresher
A 45-minute game with the whole team once a month keeps hygiene, allergens and temperature control fresh.
Kitchen vs front-of-house
Run a team challenge between the kitchen and service teams. Allergen and cross-contamination cards matter to both.
What your team practises
- Personal hygiene, handwashing and when to report illness
- Cross-contamination between raw and ready-to-eat food, boards and utensils
- Allergen awareness, with the "Spot the allergen" quiz cards
- Temperature control for storage, cooking, hot holding and cooling
- Cleaning, pest sightings and what to do when something goes wrong
What it costs
One game is R1 800, or R1 500 each for 3 or more (ideal for restaurant groups and franchises). It is a once-off cost you can reuse with every new hire. See pricing and ordering or bulk orders for groups.
“The game changed the atmosphere in the production facility. The staff was in high spirits the entire day. They were talking about what they learned, asking when they could play again, and the entire day they were aware of food safety. They implemented what they learned and held each other accountable in a fun way.”
Common questions
Is Food Safety Legends accredited R638 training?
No. It is a hands-on learning tool that reinforces accredited food handler training. Use it between courses so the knowledge sticks; it does not issue certificates.
How long does a session take?
A full game takes 30–60 minutes. A pre-service huddle using a few cards takes 5–10 minutes.
Do I need a trainer to run it?
No. The game can be played independently or led by a manager or head chef. The rules are in the box and on our how to play page.
How many staff can play at once?
Two or more players. Larger teams play in small groups or as teams competing against each other.
